Balsamic Glaze
2 Tablespoons olive oil
3 tablespoons balsamic
Cracked pepper or native pepper
Seared Kangaroo
Olive oil
Cracked pepper(native)
500g kangaroo fillet
150 g rocket
½ cup shaved parmesan
3 tablespoons parsley and other fresh herb
Mixed greens


  1. Combine all the ingredients for the balsamic glaze together
  2. use some of the balsamic glaze to marinade kangaroo
  3. heat oil and add the onion until brown
  4. cook kangaroo coated with pepper to seal then finish in oven for 5minutes or cooked rare
  5. put aside for 1 minute
  6. make salad
  7. slice kangaroo
  8. mix onion, parmesan, salad
  9. dress by drizzling the rest of the glaze over the salad
